Neighbors and friends swept, dug, and spread compost and smiles at our two gardens at 423 and 615 Chestnut Street. We’ll have another Garden Day on April 12 from Noon to 3 PM, and again on Wednesday, April 23 from 2 – 3 PM.

MOSAIC CLT Community Garden News!‏

Hi Everyone,

I hope your day has been filled with sunshine and happy thoughts about the outdoors – I know mine has!

MOSAIC would like to extend a sincere thanks to all those who attended the first CLT Social in 2014!  The social gave everyone a chance to get caught up and chat about the happenings at the Land Trust.  We listened to music, watched a slideshow of Community Garden pictures from the last two seasons, ate delicious foods and some even completed their garden paperwork that day! :-)

For those of you who could not attend, here is some of what you missed…check it out:

First Things First:

Garden Plots are Being Assigned Left-and-Right!

If you have not done so, please fill out a garden application along with payment for your plot fee, ranging from $30.00 – $55.00 (based on income) as soon as possible in order to guarantee your plot assignment in 2014.  

Plots will not be ‘held’ for anyone without the minimum requirements being met.  We want to ensure that everyone who desires a plot gets one, therefore it is a must that you get your application and fee submitted quickly – don’t wait – plots are going FAST!  Any additional paperwork required can be filled out during a volunteer day or on the first Open Garden Day (TBD).  

Visit us on the web at mosaicist.org to get a copy of the MOSAIC Community Land Trust application and the Community Garden application.  

Remember, everyone who submits the necessary paperwork and pays the appropriate plot fees will receive a complimentary membership to the Land Trust!  Be sure to fill out both applications in order to receive the full benefits of what the Land Trust has to offer!

Garden Work and Play Volunteering Opportunities:

There is much work to be done at the new garden located at 615 Chestnut Street, Pottstown!  This week, we will focus on spreading compost on the perimeter beds in the front of the garden at 615 Chestnut Street, while tidying up in all areas and turning the compost piles at the 423 Chestnut Street location.  

The jobs and tasks at hand may change, but the need for help will NOT!

Please plan to meet us at 423 Chestnut Street at 2:00 PM sharp on Wednesdays and 10:00 AM Saturdays to gather tools, gloves and an awesome job to do!  We will work for 1 to 1.5 hours each Wednesday and 2-3 hours on Saturdays for the entire month of April!  It’s bound to be a great time had by all! :-)

Volunteers wishing to work with children in any capacity will need a child abuse clearance and a completed criminal background check.

Please visit the following sites to complete the process.  The criminal background report is provided instantly online.  The child abuse clearance will take some time as it is sent via U.S. Mail. Both reports are required when working with children.  Please allow 2-4 weeks to complete the process.  We need volunteers for MOSAIC’s Summer Youth Program beginning in June – get your clearances submitted today to ensure YOU can HELP OUT this Summer!

Mosaic To Hold Spring Social, March 29th

MOSAIC is excited about Spring 2014! Irregardless of the cold, wet and snowy weather we are experiencing, let us all be happy and content in knowing ol’ man winter’s days are numbered!

And to celebrate, MOSAIC is hosting its first Community Garden Social for the season! The social will be held on Saturday, March 29 from 5-8 PM at 10 S. Hanover Street – the MOSAIC office location.

The Garden Social is a great time to meet new people, share ideas about what to plant along with learning more about the Land Trust initiative. Now is the time! MOSAIC is moving at a fast pace this year and is looking for avenues to grow (literally)! We invite YOU to help lead the way…

Our initial goal of the social is to get everyone excited about the upcoming season! After that, we will share the future plans of the garden and the land trust! Our hope is to educate community garden members on how to develop garden plots and maximize growth in each space, while sharing key points about the entire land trust initiative.

Please plan to attend this fun and educational event! We will uncover what it is like to be on the land trust board, or a member of one of the MOSAIC’s productive committees! The Healthy Woman program at Pottstown Memorial Medical Center will hold a “March into Healthy Eating” event on Wednesday, March 12th at Brookside Country Club from 5:15 p.m. – 8:00 p.m. This event will feature an informative evening of food, facts, and fun ways to eat green. Tickets are priced at $15 per person.

Scott Bailey, Director of Food and Nutritional Services at Pottstown Memorial Medical Center will present “30 Days to Green Your Diet,” and the benefits of adding something green to every meal. In addition, Laura Washington who represents the MOSAIC Community Land Trust Gardens in Pottstown, will present the benefits of buying local and green.

Mosaic Community Garden Plots And Membership Application

Happy Day Gardeners!

We know most of you are currently set to shovel yet another batch of snow while salting sidewalks and driveways – we also know how much you would rather be shoveling dirt in order to make way for planting the most awesome vegetable seeds for a healthy harvest this season!

It is time to get excited about the 2014 growing season at the MOSAIC Community Gardens located on Chestnut Street in downtown Pottstown! Let us begin by daydreaming about tending to our garden and our neighbor’s garden on sunny days while chatting with a fellow garden member!

Next, sign up today in order to reserve and guarantee your space at the garden! Garden plots are available again this year at both 423 Chestnut and 615 Chestnut Street. We will have approximately 50 plots available for community garden growing this season. Keep in mind, these garden plots are in high demand and will go quickly – so act fast! All you need to do today is fill out the attached application and email or mail it to our office location listed below.

MOSAIC garden plot members from the 2013 growing season have preference in applying for a garden plot this year. Growers from 2013 have until March 15th to submit a completed application. After the deadline, all unreserved plots will be available on a first-come, first-serve basis to new and previous member applications alike.

REMEMBER*** Any one who submits a garden plot application is automatically offered a MOSAIC Community Land Trust membership at no additional cost!

MOSAIC wants all its gardeners to get to know more about the land trust and encourages you to fill out both applications attached. As a member of the Land Trust you can participate in discussions as well as nominate and vote for board members at the annual meeting held on May 22. Full members also have an opportunity to become a member of one of the land trust committees. Committee membership allows participants to transfer skills used at work and home or tap into undiscovered talents to benefit the overall well-being of the land trust and our neighborhoods!

In becoming a community gardener you are counted as a full member of the community land trust. We are enclosing both a garden application and a land trust application.

If you do not wish to be a member of the land trust, you do not have to complete that application. Thai-Inspired Warm Cole Slaw

20130428_163558-1 (1)We’ve paired a super-tuber with red cabbage and other colorful vegetables to provide an excellent source of flavonoids such as beta-carotene and vitamin A. This dish dumps an arsenal of high-tech, high-caliber essential vitamins and minerals such as vitamin B and niacin. Eating these and other vitamins daily play a key role in achieving peak performance in the body’s metabolic process = HIGH ENERGY!

The warm slaw can be served as a vegetarian entrée or to compliment grilled salmon, chicken or other lean meats!

2 tb of canola oil

1 tb white rice vinegar

2 tb honey

2 tb sesame oil

sea salt to taste

½ tsp crushed red pepper

1 tsp natural peanut butter (substitute with almond butter or sunflower butter)

1 tsp fresh ginger or ½ tsp ginger paste

1 tsp fresh garlic chopped

½  lb of sweet potato diced

1 lb red cabbage chopped

½ c red peppers chopped

½ c yellow pepper chopped

¼ green pepper chopped

¼ red onion chopped

Serves 2 as an entrée or 4 as a side dish

Prep time:  20 mins Cook time: 8 mins

Add canola oil to a non-stick pan.  Heat on med-high, add sweet potatoes.  Cook for approximately 4 mins.  Whisk rice vinegar, honey, sesame oil, sea salt, red pepper, peanut butter, ginger and garlic.  Pour over sweet potatoes and stir gently.  Cover and allow to cook for approximately more 2 mins or until tender.  Add cabbage, peppers and onions to the pan and sautéing on high for approximately 2 mins or to desired texture.  Serve immediately.  

Truly, a joy to make and eat!
